New England Lobster Cobb Salad
Lobster Cobb Salad Ingredients:
- 1.5 lb. Steamed Lobster
- Romaine or Other Salad Greens
- 2 Hard Boiled Eggs
- Bacon Bits
- 2 Avocados
- Cherry Tomatoes
- Feta or Blue Cheese
- Texas Toast Seasoned Croutons
- Creamy Lemon Dill Dressing (recipe below)
This salad recipe makes 2 large dinner sized portions or 4 appetizer sized portions.
Start with a 1.5 lb fresh lobster. Most grocery stores with a lobster tank will steam them for you to save you the trouble. If you have never removed the meat from a lobster follow this Maine lobster step-by-step guide with photos.
Remove lobster meat and place in a bowl, keep chilled until you are ready to put the salad together.
Cook Bacon (Oven Method)
To make the bacon bits for this lobster Cobb salad I cooked the bacon using my favorite method, in the oven.
If you haven’t tried cooking bacon this way, it is not only easy but the pieces of bacon come out nice and long and evenly cooked!
Preheat oven to 375º. Place strips of bacon on a large baking sheet and place in the oven. Since everyone likes different levels of crispiness in their bacon just keep an eye on it as it cooks.
Cooking times will also vary depending on the thickness of the bacon you are using. Start checking after 15 minutes until it looks cooked to your liking.
Place cooked bacon on a paper towel-lined dish to absorb the grease. Cover the bacon with an additional paper towel. Once the bacon has cooled crumble 5 strips into bacon bits.
Perfect Hard Boiled Eggs
There are many ways to cook hard boiled eggs but this method using a pressure cooker makes what I think are perfect hard boiled eggs every time!
It’s called the 5-5-5 method. This translates into cooking on high pressure for 5 minutes, shutting off the Instant Pot and leaving the eggs in for another 5 minutes, and then removing the eggs and putting them in a bowl of super cold water for 5 minutes.
Add 1.5 cups of water to the bottom of your Instant Pot, add the rack, and gently place eggs on top. Even though this recipe only calls for 2 eggs I usually make extra.
What I love about cooking eggs this way is that the yolks come out yellow and creamy but what is even better is that the shells peel off easily!
Prepare Other Ingredients
Slice the cherry tomatoes and the 2 avocados. If using a head of romaine wash and chop the lettuce. Pre-bagged romaine or other salad green mixes are fine too.
In this lobster Cobb salad I am using crumbled feta instead of the traditional blue cheese. Either work in this recipe.
Preparing the Lobster Cobb Salad
Now that all of the ingredients are prepared it’s time to plate up the Cobb salad to serve.
The salad looks lovely arranged on a large serving platter but a large salad bowl can also be used.
Start by arranging a bed of lettuce on the bottom of the platter. Then it’s time to layer all the other ingredients in rows for a spectacular presentation.
On my salad from left to right I did tomatoes, lobster, hard boiled eggs, croutons, avocado, feta cheese, and then the bacon.
Creamy Lemon Dill Dressing
Here is a homemade dressing that compliments the flavors of the lobster Cobb salad. It is quite tangy!
Ingredients:
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons fresh lemon juice
- 1 tablespoon Dijon mustard
- 1 tablespoon chopped fresh dill
- 1 clove garlic, minced
- Salt and black pepper to taste
- In a bowl, combine the mayonnaise, sour cream, fresh lemon juice, Dijon mustard, chopped fresh dill, and minced garlic.
- Whisk the ingredients together until well blended and smooth.
- Season with salt and black pepper to taste.
- Adjust the amounts to suit your preference (I added more lemon juice to mine).
- Allow the dressing to sit in the refrigerator for at least 30 minutes to let the flavors meld together and the dressing thickens slightly.
- Drizzle the Creamy Lemon Dill Dressing over your lobster Cobb salad just before serving, or serve it on the side for guests to dress their salads as desired.
New England Lobster Cobb Salad
This salad is hearty and quite filling! It makes 2+ dinner sized portions or you can serve it as a side dish and get 4+ smaller portions.
If you are feeding a crowd this recipe is easy to double too!
If you are preparing ahead of time, wait until right before serving to cut up the avocados to prevent browning.
